EBM E-Pro Molybdenum 150mm Petty
$50.00
EBM's E-Pro Molybdenum line is built with one goal in mind: practical performance for busy commercial kitchens. If a Dexter Sani-Safe or NFS colored-handle chef's knife had a baby with a Misono MV, you'd end up with something very much like the E-Pro: durable, easy to maintain, and noticeably more refined in its cutting performance than its no-nonsense appearance suggests.
The molybdenum stainless steel offers excellent corrosion resistance, easy maintenance, and straightforward sharpening, making it an ideal choice for cooks who want dependable everyday performance without the upkeep of carbon steel. The line is available with multiple handle colors, making it easy to dedicate knives for allergen control, specific stations, or simply add a bit of personality to your knife roll.
One of the biggest surprises is the grind. Despite its approachable price, the E-Pro is ground noticeably thinner behind the edge than most commercial Western-style chef's knives, giving it a lighter, more effortless cutting feel while remaining sturdy enough for daily professional use.
Steel: Molybdenum stainless steel
Construction: Monosteel stainless
Blade length: 150 mm
Grind: Symmetrical double bevel
Handle: Colored resin handle
Weight: 86 g
Balance: Between the bolster and first rivet
Origin: Japan
In Use: This is just a really handy little knife. At only 86 grams, it feels quick without being flimsy, and the balance point between the bolster and first rivet makes it easy to maneuver for all the little jobs a chef's knife is awkward for. The thin grind lets it sail through shallots, herbs, citrus, trimming, and other detail work with very little effort. It's the kind of inexpensive petty that ends up getting used far more than you expected simply because it's enjoyable to have in your hand.
