Sabun's NKS-52 line comes from Endo Shoji, a long-established Japanese supplier of professional kitchen equipment and cutlery.


This 270 mm bolsterless komagiri is anything but typical. Traditionally intended for demanding prep tasks in professional kitchens, the komagiri occupies a niche somewhere between a chef's knife and a heavy-duty utility knife. Weighing 403 grams with an exceptionally thick, stout blade, it feels more like a vintage European workhorse chef's knife—or even an old lobster splitter—than the thin Japanese gyutos most cooks picture today. The lack of a bolster makes it easy to sharpen from heel to tip despite its imposing size. If you're looking for a laser, keep looking. This knife was built with an entirely different philosophy.


If you're familiar with classic European carbon steels such as XC75 or the American 10-series, NKS-52 belongs to the same general school of thought.
