Powder Pro is the premium stainless house-brand line from Endo Shoji, one of Japan's leading professional kitchen supply companies.


Earlier examples of this line were identified as using FAX20, a powder metallurgy steel produced by Nachi-Fujikoshi and typically hardened to around 65.5 HRC. While Endo Shoji no longer specifies the steel on the blade or in its current product literature, we have not seen any indication that the underlying materials or construction have changed.


As a result, we expect performance to be broadly comparable to other high-end powder metallurgy cutlery steels such as R2/SG2 or SRS15, though the manufacturer does not currently disclose the exact alloy.


One of the line's biggest strengths is its value. Powder Pro delivers the high hardness, excellent edge retention, and toughness expected from premium powder metallurgy steels at a price that's often well below comparable knives from more widely recognized brands.

In Use: This isn't a laser, and it isn't trying to be. It has enough meat behind the edge to feel confident on the board while still cutting like a good Japanese gyuto should. The neutral balance right at the bolster makes it easy to use all day, and the powder steel really rewards anyone who hates stopping to sharpen every week.
