We're excited to be among the first direct importers of Jaya Mata knives into the United States. We worked directly with Jaya Mata to bring these Malaysian-made knives to a wider audience because we think they deserve far more recognition outside Southeast Asia. The JM554-4 is forged from a high-carbon spring steel core clad in iron, creating a knife that feels refreshingly simple, tough, and easy to maintain. The core steel takes a keen edge without fuss and sharpens easily on ordinary water stones, while offering somewhat better corrosion resistance than many simple high-carbon steels like 1095. The exposed iron cladding, however, is extremely reactive and should be dried promptly after use and protected with mineral or camellia (tsubaki) oil when stored.
Unlike the rectangular profile of a traditional cai dao, the JM554-4 features a tall blade with a pronounced belly, giving it a silhouette reminiscent of knives like the CCK Lil' Rhino. At 3 mm thick at the spine, it carries noticeably more heft than the JM552 series while still maintaining a pleasant distal taper and surprisingly capable cutting geometry. The result is a knife that feels equally comfortable rocking through larger vegetables, portioning proteins, or handling the heavier prep tasks that would feel a little out of place with a thinner cai dao.
For anyone looking at the current prices of classic Hong Kong cleavers like CCK, the JM554-4 offers an appealing alternative. It delivers handmade construction, excellent cutting performance, and a much more approachable price point while maintaining the straightforward, no-nonsense character that makes traditional carbon steel butcher's knives so enjoyable to use.
The knife arrives with Jaya Mata's natural black surface finish, which the manufacturer tells us is not a paint or intentionally applied coating. It may gradually wear with use, developing the character expected of a well-used carbon steel knife. Each knife is fitted with a simple rubberwood barrel handle that responds well to food-safe cutting board oils or wax finishes. Some examples include a small screwed cap at the end of the handle where the tang exits, while others do not; this varies during production and cannot be guaranteed.
Jaya Mata has also recently begun laser engraving the model designation on these knives. You may notice yours is marked "Buther Knife"—that's exactly how it comes from the manufacturer, and we've chosen to leave it just as the maker intended.
As with many handmade working knives, each example has a bit of its own character. Some JM554-4s arrive with a slightly more rounded tip than others, which we've found to be a normal part of Jaya Mata's production. Rather than regrinding them, we ship each knife just as it leaves the maker. For those who prefer a finer point, it's a simple adjustment with a coarse whetstone or diamond plate.
Because these knives are shipped internationally in a heavy protective grease, some may arrive with the grease partially dried. We recommend washing the knife thoroughly before its first use.
