Kanetsune's Honyaki series is a straightforward expression of what makes traditional Japanese carbon steel knives so appealing: simple materials, practical construction, and excellent cutting performance. In this case, "Honyaki" refers to the name of Kanetsune's product line, not necessarily to the traditional differential-hardening process often associated with the term. Each knife is hand sharpened before leaving the factory, giving it a refined edge right out of the box.
Built from SK95 high-carbon steel, this line shares a lot in common with classic Japanese nihonko knives and European XC75-style carbon steels. The steel takes an exceptionally keen edge, sharpens quickly, and is easy to maintain for anyone comfortable with carbon steel. In exchange, it will naturally develop a patina with use and should be dried after cutting to prevent rust.
One of the biggest advantages of knives like this is their value. Without expensive alloying elements or complex construction, SK95 delivers outstanding cutting performance and sharpening characteristics at a price that's difficult to match with premium stainless steels.

In Use: At just 71 grams, this petty feels incredibly light in hand. The slightly handle-biased balance makes it quick and easy to maneuver for trimming, peeling, garnishes, fruit, herbs, and all the little jobs that don't call for a full-sized chef's knife. Like the gyuto, it has a bit less knuckle clearance than many modern Japanese knives, giving it a familiar nihonko-style feel.
